The Producer
This lot was produced by Migoti Coffee Company, who work with smallholder farmers cultivating Red Bourbon at around 1,800m above sea level. After hand-sorting at the Migoti washing station to remove defects and underripe cherries, the coffee undergoes a traditional washed process.
Fermentation lasts 10–12 hours, followed by a short pre-drying stage to reduce moisture before a slow drying period of 20–25 days on raised beds. During this time, the coffee is turned regularly and defected again by hand to ensure clarity and consistency in the final cup.
Once dried, the parchment is transported, milled, and sorted by size and density before final bagging in GrainPro for export. The result is a precise, elegant profile that reflects the care taken throughout.
