MODERN ITALIAN COFFEE

We choose to embrace the time-honoured tradition of wood roasting, using only wood from felled and fallen trees from our local area. Unlike gas, wood contains natural moisture—ranging from 12 to 15% and helps to extend the initial drying phase of the roasting process. This allows us to preserve the beans’ natural oils and compounds, bringing out each coffee’s distinct flavour profiles.

The result is a full-bodied, smooth coffee with reduced acidity making it versatile for both espresso and filter brews.
